Maya + VRay Shadow Matte, HDRI, and Compositing (2020)

To create a shadow-catching ground plane, create a poly plane, name it something reasonable like, GroundPlane and using Hypershade, assign it a VRayMtlWrapper and set Matte Properties to Matte Surface and Alpha Contribution to -1. Enable Shadows and Affect Alpha (so shadows are included in alpha). Receive GI allows shadows to be colored by GI, but causes the matte knockout to be less than fully transparent, so uncheck that. Then in Base Material, attach a VRay Mtl of some sort.

Nice tutorial that covers this, as well as some other compositing info like HRDI setup, etc. Ultimately it uses Photoshop for compositing, and in reality we'd use Nuke or After Effects with EXR images (including render elements), but it's a good overview:
